Taiko Cuisine, the restaurant of the Amsterdam Conservatorium Hotel, named ‘Best Asian Restaurant 2023’ by Gault & Millau, launched the ingredient of the year on October 30th: rice. Each year, inspired by the Chinese New Year, Taiko Cuisine celebrates its birthday with a ‘Taiko New Year’ event, accompanied by a select group of guests. On this occasion, chef Schilo van Coevorden presents the ingredient that he will feature prominently in his menu for a year. In the Year of Rice, dishes such as Nigiri Amai, Congee with Local Clams, and Wagyu Sake Kasu are featured on the menu.
