This season, Nobu Hotel Ibiza Bay unveiled new gastronomic space Gusto, the latest of the hotel’s exclusive experiences. Opened on 21st May, Gusto proved to be a huge success with acclaimed chef Nieves Barragán Mohacho at the helm. The launch marked Barragán’s first return to her Spanish roots following the success of her London restaurant Sabor – one of the capital’s most sought-after dining destinations, which earned her a Michelin star.

Bilbao-born Barragán is known for her commitment to using only the freshest and highest quality ingredients and showcasing the best of Spanish cuisine, a talent that has cemented her as one of the most respected chefs in the world. Gusto will showcase Nieves’ signature style of traditional but elevated Spanish food, in Ibiza Bay’s no-fuss, anything goes style.

Guests can enjoy a selection of platillos – elevated small plates – taking guests on a journey of traditional Spanish flavours. Honest, authentic cuisine prevails, championing seasonal local ingredients like fresh fish, garden vegetables, local chicken, Iberian ham, oysters and red prawns from Formentera. Signature dishes will include arroz caldoso, tortilla melosa with artichokes and a daily fish special. 

Gusto will also offer a selection of twenty wines including natural and organic varieties, of which 80% come from Spanish wine regions – many from the Balearic Islands. Txakoli wine from Barragán’s native Basque country is served by the glass, plus traditional hierbas ibicencas which is served as the house shot. Guests can also enjoy a carefully curated menu of island-inspired cocktails, featuring Spanish liqueurs and local aromatic herbs to perfectly complement dishes, as well as Nieves’ wine pairing recommendations when they choose to tapear con Nieves, making for an unforgettable dining experience.

Adding to Gusto’s charm is its magical location: a buzzing poolside spot embracing Ibiza Bay’s cocktail bar and the sparkling Talamanca seashore, which is enveloped by gentle sea breeze and golden light at dusk. The carefree and welcoming spirit of Ibiza is reflected in Gusto’s carefully considered details: from nautical-inspired decor to chilled pitchers of vibrant sangría, plus displays of fresh seafood reminiscent of local markets.
